I have recently discovered the joy of microwave-cooking. Yesterday, I made this dish, which turned out pretty delish, and was so simple to make!
Ingredients :
1 cup rice (wash at least once and drain)
1.5 cups water (room-temperature)
1 cup chopped vegetable (frozen or fresh)
1 long sliced sausage (replaceable with bacon or luncheon meat)
1 tablespoon oil
1 tablespoon tomato sauce
1 tablespoon soy sauce
Directions :
1) Put all ingredients into a deep microwave-safe bowl. Stir and cover (not tightly).
2) Microwave on high for 10 minutes. Let it sit for 1 minute. Take out and fluff the rice (so that the inside portions are now outside). The rice should look half-cooked by now, and should be a lovely light brown colour. The frozen vege (I used the 3-beans mixture) should be cooked and colourful.
3) Put back into microwave and cook on medium for another 10 minutes. Let it sit for another 1 minute or so (or until you're ready to serve).
4) Take out from the microwave, fluff and serve.
This recipe serves 2 persons.
I love this recipe because :
- I only have a microwave bowl to wash later (which requires practically no effort), and not a sticky, have-to-soak-overnight-to-get-out-the-cooked-rice pot.
- It's a healthier version of the actual, oily fried rice.
- It's a one-dish meal, a meal in itself.
- I can cook this even if I'm home late from work.
- It's practically a no-brainer! :)
